Duck in honey…

SOME SWEET SUNDAY LUNCH

Your family is coming to Sunday lunch and you want to prepare something special. instead of usual roast I decided to prepare duck, glazed with honey. On Saturday I started preparation because I wanted to marinate the duck overnight in orange juice, soy sauce and cinemon. While preparing the marinade (below you can find all the ingredients) I can not decribe to you all scents you coud experiance while crushing coriander seeds and mixing cinemon, soy sauce and orange juice in mortar.

After I prepared this lovely marinade, I had only one thing left to do. Cover the duck inside out with this marinade and leave it in refrigerator overnight.

On Sunday, when I placed the duck in the oven, almost 3 hours before guests arrived, you could smell this citrus scent coming out of the oven, blended with other spices and duck meat. Ingredients

  • MARINADE
  • 2tbs of soya sauce

  • 1/3tbs of coriander seeds

  • 1/3tbs of cinemon

  • 1/4tbs of ginger powder

  • orange juice of 1/2 orange

  • salt

  • pepper

  • 1/2 orange

  • 6 garlic cloves / unpealed

  • MEAT
  • Duck 2 – 2,3 kg

  • SPREAD
  • 2tbs of honey

  • 1tbs of soya sauce

  • 1tbs of brown sugar

Directions

  • Day before prepare your marinade. Crush coriander seeds using pestle and mortar, add cinnamon, ginger, soy sauce, salt, pepper (by taste) and finally squeezed orange juice from 1/2 orange. Mix everything using pestle and mortar. Cover the duck from inside and outside with marinade, insert other 1/2 of the orange and 6 garlic gloves inside of the duck and leave it overnight in refrigerator.
  • Preheat the oven at 200C. Bake the duck covered for 60 minutes, then turn it on other side and continue to bake for another 60 minutes.
  • Prepare the spread. Mix soy sauce, brown sugar and honey. After 2 hours, take the duck out of the oven and spread the mixture on upper half of a duck. Bake for 10 minutes at 200C – uncovered. After 10 minutes, turn it on the other side, spread other half of the mixture and bake for another 10 minutes. Take the duck out of the oven and leave it for 15-20 minutes to rest before slicing.
  • Duck can be served with variety of side dishes. We decided to take traditional Croatian approach with traditional pastry “Mlinci”. Mlinci are prebaked pastry, prepared with pouring boiling water over them, drained and then baked in the duck gravy leftover. Same can be done with cooked potatoes.
