A LITTLE BIT OF EVERYTHING

Want to prepare something different from everyday lunch? You’re used to meat and ordinary recipes? Make a stew, your way. This time, I made delicious stew from ingredients I had at home. Avoiding meat, avoiding store vist. Just me, my imagination and ingredients I already have.

Base of this stew will be lentil and leek. I will combine two different types of lentil in this recipe. Green lentil (the common one) and black beluga lentil which I prefer in front of green lentil. When cooked it doesn’t become soft an soggy, it holds its consistency and taste.

By adding more vegetables and spices flavor and complexity of this dish is more and more profound. Try to make similar dish for yourself with your twist and suprise yourself how tasteful vegetables only dish can be. Enjoy.

Ingredients

  • 30g of dry green lentil

  • 20g of dry black beluga lentil

  • 3 medium potatoes

  • 1 large leek (aprox. 700g)

  • 3 medium onions

  • 2 cloves of garlic

  • 4 medium carrots

  • olive oil

  • pepper

  • salt

  • water 1L

  • bay leaf, soy sauce (1 tsp)

Directions

  • Prepare, clean and wash all vegetables including lentlils. In the occasion it wasn’t neccesary to soak lentiles overnite. Just be careful when combining 2 or more different verieties of lentils to take care on cooking time.
  • Add olive oil in the pan (around 100mL). Add onions and garlic. Simmer 5-6 minutes or until onion becomes translucent, Add water 0,5L and add green lentils. make it boil and cook for 10 minutes.
  • After 10 minutes add vegetables, black lentils and rest of vegetables and water. Cook for another 20 minutes.
  • At the end season it by your taste and enjoy your lunch or dinner.
