Best and super easy Guacamole recipe…

Avocado and other dishes / starters made from avocado were introduced to me several years ago through my sister that become “heavy duty” vegan. Before that it was unknown ingredient to me. What a shame.

GUACAMOLE DIP

This guacamole recipe is based on simplest and authentic recipe. With slight modification in amounts of ingredients. It is base. You can upgrade it based on your preferences. Add some jalapenos or chili powder to spice it up. Add some cheddar cheese or sweet corn to bring more texture and flavors. When you have this base, possibilities are numerous.

Regarding ingredients list – it is important to use ripe avocados in order to have that creamy but consistent texture that will combine all other ingredients together. However overripe avocados could be too gooey and brown inside. Well ripe avocados should have stems attached and if you push the sides you should be able to slightly push it in.

Lime juice is traditionally used in preparation. Of course you can substitute it with lemon juice. Advice – always use freshly squeezed juice for more natural and rich flavor.

White onion is my choice when preparing Guacamole because it is crispy and has more light or fresh taste.

When storing your guacamole, place plastic foil on top of it in a way that foil touches whole surface of guacamole in order to remove all air from the bowl. In that way you can store it in your fridge for a day or two without turning brown. It is good to use guacamole in 1 day time so that vegetables inside don’t become too soggy.

Ingredients

  • 2 avocados, ripe, large

  • 1 tomato, medium, diced

  • 1/3 white onion, medium, diced

  • 1/3 bunch of fresh cilantro, finely chopped

  • 3 tbsp. of lime juice

  • 1/2 tsp. of sea salt

  • 1/4 tsp. of black pepper, freshly ground

Directions

  • Cut 2 avocados in half lengthwise, remove their pits. Scrape the flesh of the avocado out with a spoon. Place in a bigger bowl and mash avocados with a potato masher. Mash it well but leave chunky consistency.
  • Pour over lime juice (it will prevent avocado from turning brown).
  • Add onion, tomato, cilantro, salt and pepper. Stir until all ingredients are well combined.
  • Serve with some nachos!
